Waffles for breakfast???



I found the most delicious waffle recipe! And it is healthy...and grain free...and it actually tastes like you are eating real waffles!!


Grain-free Gluten-free Waffles:


3 eggs, room temperature if possible
3 Tbsp water
splash vanilla extract
Optional – 1 Tbsp maple syrup, honey, or other sweetener, I put some cinnamon in mine.
1/4 tsp salt
1/2 tsp baking powder
3 Tbsp coconut flour

Preheat your waffle iron. Mix all the ingredients together until the batter is no longer lumpy. Then let the batter site for about five minutes. The coconut flour has so much fiber in it, it is good to let it soften and absorb some of the liquid. Stir it again when the waffle iron is hot and ready. You may have to add a little more water if it has gotten too thick.



This recipe makes four waffles, so evenly divide the batter over the four squares. It will rise, so don't fill them too full. Let the waffles cook for a few minutes. When they have stopped steaming a lot, check them. When they are golden brown, they are ready. Top thaws with a fruit topping and they don't get soggy. They are really delicious!

Happy Thanksgiving!

We had the best day on Thursday, and I hope that you did as well. There is so much to be thankful for these days!


I snuck in a protein pumpkin pie, and it totally passed for a "gluten free, sugar free pie" :). Grandma said that she liked it best, but I am sure that she just felt bad, because everyone else liked mom's better...oh well. At least I had a dessert that I could enjoy.

Pumpkin Farm

My mom is the most amazing woman I know. I never in a million years, ever, thought that I would see her driving a tractor, holding a baby goat, picking up a rabitt, or running around in a chicken pen. She has sure broadened her horizons with this job, but I think that it is a perfect fit! She did a fantastic job. Thank you so much Mom, for letting Grandma and I join the field trip on Friday. We had so much fun!

I picked up some pie pumpkins that I am going to roast and make my own pumpkin puree. I cannot wait for that!



Here is a picture of my mom and grandma (92) at the pumpkin farm. It really is a beautiful place. It is hard to believe that I grew up in Morton, and I cannot remember ever going to a pumpkin patch! Mom, did we ever go? I am so glad that I got to experience it now. Ackerman Farms is just outside of Morton on 150. Get off on the Goodfield Exit and take 150 towards Morton, you cannot miss it! You will probably get to see my mama, and she might even take you on a hay rack ride! They are only open through Halloween, so you better hurry!

One whole year!




It is hard to believe that it has been a whole year since I met Caitlin, Suz and Gretchen! These ladies are amazing! Caitlin has a whole year of clean eating under her belt and she looks and feels incredible! Suz is down almost 60 pounds and is stronger than ever. And Gretchen just ran a marathon in 4:09! Thank you for pushing yourselves and striving to be fit and healthy over the last year. Every week, I am more and more impressed by you!

Our New Spokesmodel??


Rachel's daughter, Brooke, is showing off her muscles in a boot camp shirt! We are pushing ourselves to get stronger and healthier every single day, and it is carrying over to the next generation. Be proud that you are all teaching your daughters that strength and health is a lifestyle, it makes you feel good, and it makes you a better mom!

Boot Camp Baby





I got to meet Ameila today. She is precious and very pensive. She already seems amazed by the world around her. Mama Julia is doing great, looks beautiful, and is ready to get back to boot camp! We are ready for her return, but in a couple more weeks.

Race for the Cure!




I am so proud of all of the runners and walkers at the Race for the Cure this weekend! What a great cause for us to support!! Thank you for your hard work and for your determination!

Each one of the MLBBC ladies who I talked to, beat their goal times! I am so proud that we can go out and run a few miles for a good cause and that we keep getting faster! Your hard work each day makes you stronger, faster, and leaner!

I got the note from Henry (my CSA farmer) this week and it said that we would be getting okra. I am not sure that I really like okra, so I don't think much of it. I continued to read the newsletter and it said that it in their family it is not summer until they get to have okra. So I read the simple recipe, slice the okra, heat olive oil (I added a little butter to the oil) in a skillet, salt and pepper, and it is summer. I have only had okra in gumbo, so I was intrigued to try it this way.

OML it is DELICIOUS I want more. I cannot believe that I have gone my whole life without eating okra!

Mom! Why did we not eat this my whole life?? Be sure to let the okra turn golden brown before you move it in the skillet. You will not be disappointed! Try it! I need to find more...

Protein brownies!!!



They work with your protein ladies! These brownies are delicious. They are not too sweet, but they are creamy and chocolate. :). Try them and let me know how you like them.

2 scoops chocolate protein powder
4oz water
4 T heavy whipping cream
1/2 tsp. Baking powder
1T cocoa powder

Preheat oven to 350. Lightly spray mini muffin tin with cooking spray. Shake all ingredients in a shaker jug. It should be about the consistency of cake batter. Pour into muffin tins about 2/3 full. Bake for 5-6 minutes. Enjoy!

Deodorant



I was talking to my chiropractor about my sweaty pits the other day and he recommended that I try Tom's of Maine. He said that as women we really don't want to be putting aluminum that close to our lymph nodes. Aluminum is in most anti-perspirants, and has had a connection disease when it gets into our bodies. I tried the Tom's unscented and it works pretty well. Since I want you as healthy as possible, check out your deodorant and see what is in it. I don't want you eating chemicals and I don't want you putting them on your body either!!!

Purslane???




I love it when my food comes home with dirt on it! Thank you Henry. I just made this salad it is so good...purslane...the WEED that grandma has been desperately trying to keep out of her yard and garden all summer was harvested by my csa farmer and in my veggies for the week. It is delicious. I am going to have grandma harvest it for me next time instead of throwing it in the garbage! Yum...

Purslane, diced onions, tomatoes, corn (yes, I know it is a grain, and the only time you will ever see me eat it is when it was picked this morning and I cut it off the cob...yum, tastes like summer!), salt and pepper. I am so excited to eat this.
